Quality & Grading
Examples of good quality fish:
This pretty tail cut comes from a fish, fresh off the boat. White marbling is due to a higher fat content. Fat will appear better after it chills down.
This tail cut shows a leaner fish with good color but no oil.
Processed fish in the holding cooler, ready to pack. This is good quality, fatty fish, with a pinkish color and excellent shape.
Beautiful, 1+ North Carolina bigeye tuna loin.
Examples of fish damage:

Harpoon damage will decrease the value of your fish.

When using a harpoon, try to avoid the belly of the fish, which results in loss of valuable meat.
